A high protein diet also causes premature aging and lowers life expectancy. Vegetables are good sources of minerals, enzymes, and vitamins. Fruits are also important in that they provide minerals, vitamins and trace elements, and they are good sources of natural sugars.

However, grains, beans, and some vegetables are actually better assimilated when cooked. Grains need to be cooked or sprouted in order to release their minerals and trace elements which are chemically bound to phytic acid for effective assimilation.
Vegetables such as asparagus, rhubarb and some members of the cabbage family should never be eaten raw, since they contain toxic substances that are destroyed in cooking.
